BBQ Chicken with a Homemade Sauce Recipe

  1. For the Homemade Sauce


  • Orange juice, 200ml
  • Smoked Paprika, 1 tablespoon
  • Sea salt, 2 tablespoons
  • Dark brown sugar, 4 tablespoons
  • Cloves, 6
  • Dijon mustard, 4 tablespoons
  • Chopped onions, 2 larges
  • White vinegar, 200ml
  • Groundnut oil, 3 tablespoons
  • Mild chili powder, 2 tablespoons
  • Black treacle, 1 tablespoon
  • Passata, 400ml


Cook the onions on a medium flame for about 15 minutes until they are golden and soft. Then add all the other ingredients and let it simmer and boil and then let it rest. You can take a brush to apply it on your barbeque chicken to provide it a spicy glaze. You can even store this sauce for over 2 weeks in a refrigerator.

2. For BBQ Chicken


  • Entire Chicken, 1.5kg

For Thyme Butter:

  • Crushed Garlic, 2 gloves
  • Lemon, 1 (half juiced and zested)
  • Softened unsalted butter, 100g
  • Chopped thyme, few leaves

For Marinating the Chicken:

  • Salt flakes, 1 tablespoon
  • Crushed black peppercorns, 1/4 tablespoon
  • Garlic granules, 1/2 tablespoon
  • Chopped thyme, few leaves
  • Mustard powder, 1 tablespoon
  • Brown sugar, 1 tablespoon

Serve With:

  • Coleslaw
  • Mashed Potatoes
  • Corn on the Cob
  • Green salad


Prepping the Chicken: This part involves the part to make the chicken like a pocket. It starts by cutting off the legs of the chicken by popping and cutting through the joint of the leg. This will make the thigh and leg in one piece. Now, turn the chicken upside down and grab a pair of scissors to cut the spine and the ribs on both sides of the spine. After this, the wings and the breast will be connected to the breastbone. Now, take your hand under this chicken but be careful. You don’t want to pierce the skin; you only want to make a pocket.

Line the Chicken with Butter: Mix all the ingredients of thyme butter in the bowl and then apply it on the underside of the chicken to make a layer. You can also add a little bit of seasoning.

Marinating the Chicken: Mix all the ingredients necessary to marinate the chicken and apply it all over the chicken – legs, and breasts. Then cover the chicken and place it in the refrigerator for 2-4 hours. When you want to cook it, take it out 1 hour before it.

Cooking the Chicken: Turn on the flame on medium and heat the barbeque grill and put the charcoal on one side. Now put the chicken in such a way that the underside of the chicken faces down while the thickest part of it is in front of the charcoal. You have to be careful in this process because the butter may meltdown and flame up. Cook the chicken in this position for about 25-30 minutes with the lid down. Keep checking the chicken between intervals to turn the sides and to cook it evenly. After this take the chicken and put it directly on top of the charcoal for 2-3 minutes to give it that crisp.

Serve: Cover it with an aluminum foil and let it rest for 15 minutes to completely soak the flavor. After then squeeze some lemon on top. Serve it with veggies, salads, and sauce.
