What is Frying?

Frying Cooking Method

Frying is the immersion of food in oil or fat medium, which is then heated until cooked properly under varying conditions based on the type of food. It utilizes the fat medium for the conduction and convection of heat towards the food. Food that is cooked by heating through high-temperature fats is known as fried food.

The primary goal of frying is to achieve a brown and crispy layer upon cooked food. Technically, frying is a dry-heating process similar to roasting, grilling, and baking, as the food is heated using a greasy medium instead of cooking it in water.

History of Frying

Who Dropped The Food In The Hot Oil Pan? In general, frying was evolved by Egyptians in 2500 B.C. There was no clue that this introduced technique would cause a massive change in the cuisines, globally. With the advancement of time, frying became the fastest cooking technique for creating innovative recipes. Doughnuts (fried cakes) were the very first thing to be fried using this technique.

In middle-ages, vegetable fritters were introduced in Europe, while in 16th and 17th-century tempura and deep-fried fish became trendy in Japan and Great Britain, respectively. Later, the cuisines got a grip on new fried recipes, and with the advancement, people can now fry anything they want!

Why is there a need to fry? Frying is an anonymous process of cooking the food faster, in contrast with water, as oil is given the heat at a high temperature than water. Moreover, frying gives a more beautiful crispy appearance to the food unlike, boiling, steaming, or broiling that make the food soft and soggy.

Various Ways of Frying

Shallow Frying: Shallow frying is the technique in which food is submerged partly in the oil, which might be one-third or one-half of the piece of food. It involves cooking the food properly on a lower flame and for a longer time.

Deep Frying: Deep frying involves using a large quantity of oil in which the food is immersed into it completely. The standard temperature conditions are kept consistent by using a food thermometer in deep frying. The food is quickly and evenly fried from all the sides as it involves high-temperature.

Pan Frying: In pan-frying, a few drops of oil lubricate the surface of the pan to increase the contact between the food and flame. The thin layer of oil on the pan is involved in the convection of heat to cook the food. A proper color develops on both sides because the food is flipped on either side by every 15-20 seconds.

Stir-Frying: In stir-frying, a wok having high-sloping sides is used with a broad (a curved spatula). A few tablespoons of oil along with the dry seasonings and uncooked food are added in the wok. The wok is heated with high temperatures. The food is mixed with a stirrer rapidly so that it cooks properly and does not adhere to the surface of the wok.

Sautéing: Sautéing is a similar process like stir-frying as it also involves a little amount of oil to cook the food. The comparison pops up when it comes to the point of heating, as sautéing involves medium heat to cook while stir-frying requires extreme heat.

However, they started to use them in restaurant kitchens for frying purposes.

The frying tools were modernized when people started to develop utensils that are easy to handle and capable of giving better performance, like stainless steel and heavy caste-iron skillets with sliding slopes. Moreover, deep fryers, woks, food thermometers, and spider spoons are in use nowadays.
